The words you use are rarely the words they search.
Businesses describe themselves in industry language. Customers search in plain, sometimes clumsy, language - and often for the problem rather than the service.
Keyword research is the work of finding that gap, then deciding which of the terms in it you can realistically win.

The biggest number is usually the wrong target.
A busy search term and a profitable one are rarely the same term.
The broad phrase gets the most searches and the least commitment - people comparing, studying, looking for something free. The narrow one gets a fraction of the traffic from someone who has already decided.
Which is why a keyword list sorted by volume points you at the hardest, least valuable end of it.
Four things that make a keyword worth chasing.
Search volume on its own is the least useful of the four, and the one most reports lead with.
Intent
Whether the person typing it wants to buy, or is researching, or is looking for something free. A high-volume term with no buying intent produces traffic and nothing else.
Realistic difficulty
Some terms are held by national businesses with years of authority behind them. Knowing which to leave alone is as valuable as knowing which to chase.
Local variation
What works in Melbourne is not always what works in Brisbane, and near me searches behave differently again.
The long tail
Longer, more specific searches convert far better and are much easier to win. Most businesses ignore them for the obvious term they will never rank for.
What businesses ask about keywords.
Can we just rank for the obvious term?
Sometimes, and often not. The single most obvious phrase in an industry is usually the most contested, held by businesses with years of accumulated authority.
The quicker route is normally a group of specific terms with clear intent, which together bring more enquiries than the headline term would.
Is keyword research a one-off?
The bulk of it is, but search behaviour shifts and competitors move. It is worth revisiting rather than repeating from scratch.
Does this still matter with AI search?
It matters differently. AI answers are assembled from pages that clearly address a question, so knowing the question people actually ask is arguably more useful now than knowing a keyword's monthly volume.
